Breakfast Casserole

½ ounces spicy or mild bulk pork sausage
½ cup finely chopped onions
4 cups frozen hashed brown potatoes – thawed
1 ½ cup shredded Colby/Monterey Jack cheese (6 oz.)
3 beaten eggs
1 cup milk
¼ tsp pepper

 

In a large skillet cook sausage and onion until no pink remains.
Drain

In a 8x8x2  (2 quart) baking dish layer potatoes, half of the cheese, sausage-onion mixture and remaining cheese.

In a bowl combine eggs, milk, and pepper, pour over cheese.

(Casserole may be covered and chilled overnight)

Bake, covered in a 350 degree oven for 50-55 minutes.  Let stand for 10 minutes
