Here is a recipe that I saw and I have modifed it some what. Quite easy to make.

Flatten your chicken Breast.

In a pot combine 2 small cans of tomatoe sauce.  1 can of diced pineapple chucks. Approximatly 2 tbsp of Apple Cidar Vinegar , 2 Tbsp of Soy, 3-4 Tbsp of Brown Sugar. 1/2 of Red Onion  Heat on Medium

While the above is cooking.

Take your chicken and cut a few  slices of ham steaks or you can use deli ham. Place shredded White American Cheese or whatever cheese you have on hand. Roll and seal the chicken with skewers. The cheese tends to ooze out. I(f you like extra cheese just place on the chicken as it comes out of the oven.) Bake the chicken on the appropriate temperature and cook. I add chicken broth in my pan to give extra flavor.

When the  chicken is FULLY cooked.Place  rice on a plate , place the chicken on the rice pour the Tomatoe Sauce.

This dish is sweet and tangy.
